Chef’s corner: Sam’s Goan fish and prawn curry

Having so successfully missed National Curry Week last month, we were somewhat at a loss what to do with this amazing Goan Fish and Prawn Curry from Sam’s Brasserie & Bar in Chiswick.

It’s tasty enough to eat any time, but good things come to those who wait (or are slightly unorganised) because now the weather has definitely turned chilly, it’s the perfect dish to warm the cockles of your heart.

Goan Fish and Prawn Curry

Coley 560g (or any white round fish)
tiger prawns
2 medium onion chopped
4 tomatoes skinned and chopped
650 ml of coconut milk
4 green of red chillies
2 table spoons of chopped fresh coriander
Salt and pepper

For the curry paste
6 red chillies seeded and roughly chopped (leave the seeds in for extra heat)
2 tablespoons of ground coriander
2 teaspoons of ground cumin
1 teaspoon of turmeric
5 cm of chopped ginger
2 table spoons of prepared tamarind

Method
1. Blend all the ingredients for the curry paste in a blender until smooth
2. Lightly fry the onions until golden brown. Add the curry paste and fry this for about 3-4 mins.
3. Add the chopped tomatoes and fry for a further 2 mins. Add the coconut milk and bring to the boil.
4. Cut the fish into chunks and add to the curry sauce, cook until just tender

For the Kachumber
1. Finely dice half a cucumber and 2 tomatoes, with the seeds and watery flesh removed
2. Mix with enough olive oil and lemon juice to coat, season with salt and pepper and coriander.

Finish with steamed rice, Kachumber salad, coriander

Wine Match

This dish is just bursting with flavour. Chillies, coriander, curry spices, not to mention the seafood elements…
