    Coming from cooler northern Italy, this is an amazingly fresh wine, and is exactly the sort-of fantastically crisp and full-boded Chardonnay we all should be drinking. There is a nuttiness in there, with some apricot and a long, honeyed finish which makes it a wine to savour and look impressive in front of your friends, particularly if they like White Burgundy.

    Hand/machine harvested : Hand harvested into 20kg boxes.

    Harvest dates : Beginning of September

    Length of fermentation : 15 days.

    Steel tank/barrel fermentation : After soft pressing using an air press, fermentation begins in stainless steel tanks at a controlled temperature of 8/10°C for 15 days after which the temperature is increased to 20°C. Malolactic is then completed.

    Bottle/cask ageing : 12 months in stainless steel tanks before filtration & bottling.

    Colour : Straw yellow.

    Bouquet : Peach, banana, acacia.

    Serving temperature : 13°C

    Food match : Seafood, shellfish, Lobster

    Ageing potential : 4 - 8 Years
