    Fantastic Champagne with exceptional balance. The green apple fruit and the creamy texture combine magnificently to create moreish, dry and crisp Champagne. This relatively little known house beat several Grandes Marques Champagnes in a blind tasting conducted by one of France’s premier panels.:
    • Grape variety and blend : Pinot Noir 60%, Pinot Meunier 25%, Chardonnay 15%

    • Alcohol : 12%

    • Residual sugar : Below 8-9 gr/l

    • Age of vine : Average 40 years

    • Soil type : The sub-soil in the champagne region is mainly chalk, where it retains water well.

    • Hand/machine harvested : Hand Harvested

    • Harvest dates : September

    • Length of fermentation : 14 days. The second fermentation occurs in bottle which creates the sparkling wine.

    • Steel tank/barrel fermentation : Barrel fermentation.

    • Bottle/cask ageing : Left to mature in bottle for a minimum 15 months.
